Regan Porteous - Director
Showcasing finer produce has been a staple of Porteous’ career, which spans over two decades and several continents. His list of notable kitchens includes the Stamford Plaza in Auckland New Zealand (where he first earned his stripes), Heston Blumenthal’s The Fat Duck, Gordon Ramsey’s Michelin- starred Maze and the famed Zuma, a restaurant he opened and led in three different countries.
Carolina Angelucci - General Manager
Carolina was born in Australia but spent much of her early life in Italy, between Francavilla al Mare and Florence. Upon moving back to Sydney, Carolina began her hospitality career at Toko Surry Hills before moving to Wooloomooloo to be a part of the team that opened acclaimed restaurant Riley St Garage in 2013. Two years after opening, she was promoted to General Manager and oversaw the expansion of the business into larger scale events and the construction and opening of Busby, RSG’s private dining and bar space. It has long been Carolina’s ambition to bring the “real Italy” to Sydney and while on their annual trip back to Italy, she and Regan set out their plans to bring that dream into reality.
Carolina’s personal connection with that famed Italian hospitality has acted as inspiration to the Osteria Coogee mission - to provide an authentic Italian eating hub, that feels like coming home.
Stefano Gagliardi - Head Chef
Head Chef Stefano grew up with Carolina in their hometown of Francavilla al mare, where he began his promising career as a footballer. Due to an injury, the dream was dashed, but his competitive attitude remained. An attitude he took with him to the kitchen in his first Chef role in his home of Francavilla al Mare.
Inspired by a passion for food inherited from his Grandfather Rocco, he continued his culinary journey working with some of the best Italian Chefs. Working in London, France & Spain eventually settling in Sydney, Stefano is heading the kitchen to bring the Osteria Coogee vision to life - bringing a piece of Italy to the heart of Coogee.
